Coronation Chicken

A great way to use our Mango Chutney is to make up some Coronation Chicken.

Super quick and easy it is light years away from shop bought, bright orange sandwich filler.

Coronation Chicken

Recipe

One large cooked chicken breast

2 Tablespoons Light Mayonnaise

2 Teaspoons Pittenweem Preserves Mango Chutney

1 Teaspoon Madras Curry Powder

Flaked almonds

Cover the bottom of a small frying pan with the almonds and dry fry them until toasted. Remove from heat.

Combine the other ingredients in a bowl.

Pile the Coronation Chicken on top of warm, toasted crusty bread and scatter the almonds over the top.

Et Voila..an easy, tasty lunch in just a few minutes.

Great on a baked potato too.
